What graphics programs are among the best and most simple to use for GameSalad? I know most use Photoshop so I'm looking for the good ones besides that one.

one HUGE thing i like about gimp is if you are new there are really awesome tips in all the mouse overs. Makes the learning curve on such an overwhelming program much easier.
Having been a photoshop guy since around 97 i honestly find it a little hard to settle. I always hear that you don't need it for basic stuff. But i find that even the basic stuff just feels clunky on most of the freeware / open source stuff.
I have tested most of the free stuff and i really find that Gimp comes about the closest for me.
I am currently using it now as i just purchased my first mac to try GS. I only have photoshop on my PC right now.

Coupled with Jasc's Paint Shop Pro works pretty well for testing animations. It is PC only so those with a PC (and a shared drive) or running Windows on your Mac need only apply.

I would advise you to get PS Elements as MikeQuinn suggests, and every time you run into a snag just take a tutorial for that technique or tool on the web. You'll be doing just fine in about a 6 months.
FYI – We used Photoshop, Illustrator, After Effects, Cinema 4D, Pro Tools, Reason and Episode Pro to make our first game.... Good luck finding a single app to do everything!
If you can't afford Photoshop, I would download GIMP for free:

It does a lot of the stuff Photoshop can do - it's been around for years, and it's free.
Then go to a site like PSDTuts.com that Huge Graphics suggested to start learning.
There is also a free tool for Mac called Pixen. I have not used it, but heard great things about it.
